Oaxacan Mole Negro - THE MOST MYSTERIOUS Mexican Food in Oaxaca Village, Mexico!

    Cooking Oaxacan mole negro from scratch was one of the best food and cultural experiences I’ve ever had. On top of that, we didn’t really know what we were going to do when we set off in the morning… but things worked out for the best. Thank you to Javier and his family for inviting us into their home to cook amazing Oaxacan food!
    So in the morning the plan was
    Rent a van for the day
    Drive to a village
    Find a market
    Ask a nice Grandmother or Aunty to cook us some authentic Oaxacan mole negro
    Now, mole negro is one of the most complex and mysterious of all the Oaxacan Mexican food dishes. There’s such a huge mix of random ingredients in the dish, and no one knows for sure how it was invented or how it came about - there are only legends.
    After renting a van for the day, our driver Javier came to pick us up and we started talking with him to see if he knew anyone that would make us Oaxacan mole negro from scratch. He called his Mom, and she agreed!
    We picked up Mom in a place called Tlacolula de Matamoros, and we went straight to the market to buy all the ingredients for mole negro. Tlacolula de Matamoros is a predominantly Zapotec town, an Indigenous pre-Columbian civilization from the Valley of Oaxaca
    We got back to the house and started preparing all the ingredients. Let me tell you, mole negro has to be one of the most complex and mysterious of all Mexican food. It includes so many random and seemingly odd ingredients. It was a lot of fun to learn how to make it.
    The end result of the Oaxacan mole negro, was supreme. The sauce was so rich, chocolatey, and you could taste all the random ingredients in it - the nuts and dried fruit. It’s deliciously complex.
    Mole was amazing, and having the chance to hang out in a traditional Oaxacan village to cook was priceless.

Never traveled with a plan and after covering 1/2 of the globe I never will. I remember once, on a flight back to the US from St. Kitts, I struck up a conversation with another passenger that had stayed at an all inclusive. They were told it was unsafe to be out in town after around 6pm. They never left the property and they ended up eating meals supplied from the US that were a few grades above airline food. The resort had a private beach with drinks running anywhere from $6 US for a beer to 12$ for mixed drinks. The beach was nice but had no coral reefs close to the shore.  Where as I ate 1 1/2 to 2 1/2 pound, (that's the weight of the tail only), fresh caught rock lobster tails every night. The cost per meal came out to about $8 US. During the afternoon we would sit around a secluded beach watching monkeys steal peoples drinks and get smashed. There was a coral reef literally 15 feet off the beach and I think I saw almost as much as I did on my divers farther out. The hotel we stayed at had been owned by the same family since the time their ancestors were indentured servants. It was a bit dated and the rooms were nothing special but the trade off was this family had connections all over the Island so it came with some incredible perks you just can't get from a planned out vacation. If you want to know what you'll be doing every second of every day have at it. But if your willing to take a chance ditch the itinerary.

From the 1500's until the 1800's many Jewish Portuguese people known as Conversos and Crypto-Jews were living in Mexico and Oaxaca to escape the Inquisition. They had to practice their religion in secrecy or not at all. They used the special bread used in Mole, an egg bread called Challah for a special Sabbath meal. They would have used every ingredient available to them to make the dish extra special. Now there are virtually no Jews living there, they left in the early 1800's. That is why nobody knows who invented Mole. See also Mexican Wedding Cookies which are exactly the cookies used by the Jews to celebrate the end of the Sabbath called Havdalah and represent the moon. A Jewish wedding cannot happen on the Sabbath and so they would have had to wait for the moon to come up to have their wedding. I believe these two dishes, both Mole and Wedding Cookies were invented by Jews. Great video, Mark. People generosity is a main ingredient. Mole can be served in weddings, so sometimes people say to a couple: 'you smell like mole', suggesting they should get married. There's another saying: "Ajonjolí de todos los moles" (sesame seed of every mole), meaning someone getting into everybody's business.

Just finish eating my grandma's mole, she is from the state of Guerrero is green mole with the tamales Nejos on the side. You never truly lived if you never try this amazing delicioso plater. I love Mole.

My maternal grandmother is Mexican. She always told me each region has its own unique recipe. Agree its a truly unique Mexican food, combo of Native & Spanish cultures. Only some of the ingredients are actually native to America. As time passes other things also change due to influences of other cultures. Notice she is dressed Western, wearing short hair style and shorts, which not so long ago was not acceptable and she is using plastic bowls. Once not so long ago, our ancestors only used clay pots and bowls which are better for flavor and health. Its great that you have captured on film, her own unique recipe.
