I am Roman. This is right. Next time try it with Lardo di Colonnata. Like this way but... It needs to worm it up not in the bowl but where you cooked the pasta so it can be halfcooked... And NO PARMIGGIANO REGGIANO either! You need Pecorino. It is like a blasphemy...

A suggestion: It's much easier to premix the eggs and cheese, then melt the cheese into the mixture using boiling pasta water.

Alot chefs who cook true authentic carbonera take the pasta out el dente and add it to the sauce (still in the pan over heat) with a bit of pasta water. This lets the pasta supposedly release its starch into the sauce as it finishes cooking which results in a creamy sauce that sticks to the noodles. Either way I suppose

I’m Italian and that wasn’t the cringiest thing ever. Here’s what I typically do differently: I use spaghetti, bucatini is for amatriciana (another delicious sauce). I don’t season the water that much, the guanciale and pecorino will balance all out. I pour the cheese onto the eggs (3:1 ratio of whole eggs vs. yolks) and mix along with pepper, all before adding the guanciale. I DON’T PUT SALT AT THE END ON TOP OF THE PASTA. I just drain the pasta poorly (into and out of the colander right after) so there’s no need to save pasta water. I’m sure I came across as obnoxious and know-it-all, sorry. It’s just something almost every italian knows how to do and everyone has a different approach. That is mine. I’m sure Molly’s carbonara is delicious

I mean, that's a whole month of work from a Roman Soldier worth of salt. You salted the water, the guanciale is already very salted, Pecorino is saltier as well, And when you mix all that up, you put WHAT MORE? YEAHH, MORE SALT.

With this recipe, i recommend not putting that much salt in the pasta water bc the cheese and guanciale is very salty to begin with. when i made this, it came out VERY salty so ik for next time not to put as much salt she put in
