The authentic carbonara recipe is done with pecorino and parmesan mixed with the eggs so you don’t dry out the creamy mixture. You need to mix the guanciale fat with pasta water then add the pasta dtraight from water to the pan off the heat. Let the pasta cool a little before adding the eggs Also, guanciale is added at the end . Your pasta is too dry instead of creamy. Pasta needs to be tossed instead of mixed with thongs. Just my .02.

Lol, Italian's always insist that whatever way their particular town makes something is the only way it can be made. Every comment is like 'Only Pecorino! Too much salt in the water!' Also the low key racism, 'Best recipe I've seen from a "Non-Italian."' Plus the 'That's not how my Mama used to make it! Mama's way is the only way!' I don't find I have a problem not scrambling the eggs, I just take it on an off the heat whilst stirring. I think it'd be harder stopping the pasta getting too cold than it is to just stir to stop from scrambling. Just my preference I guess. But good shout with the guanciale- I made some carbonara whilst I was in Italy with it and now I'm ruined for the version I make at home! Tastes so so much better than bacon in carbonara, but is really difficult to get hold of where I am.

first error not cutting guanciale's skin, second one you didn't let "mantecare" (as we say in iltaly) the pasta, which means whisk with pasta's water and the liquid fat. thirdly you clearly used too little pecorino. soo that's it

This is the perfect hangover food. Although in Rome its not called bucatini, it's called trainanti. Bucatini is what the Milanesi call it to annoy Romans. I was born in Lazio, grew up in Canada. When the weather gets at its coldest, this is what I make. With a side on undressed arugula for condiment. No vinegar - that would be a disaster!

For a non italian it is a very close version of Carbonara. Suggestions: don't use the white of the egg, only the red. One red for the bowl, one for each person. Mix the red of the eggs with the cheese (70% pecorino romano, 30% parmigiano reggiano) and a lot of black pepper. Mix until it becomes a cream of medium to soft texture. Use guanciale and don't use any oil, fat will be released as you can see. Cook the pasta in boiling water but leave 3 minutes to its cooking for later. Remove the guanciale from the pan and leave the fat, drop the pasta with water from the cooking, stir the pasta on low flame and add cooking water as needed. This is to release the amids of the pasta into the fat and you will see it becoming a good cream. Continue for the 3 minutes, take the pan out of the fire and mix the cream of reds and cheese, adding water of the pasta as needed. The reds will melt but should not dry at all, and fat plus amid plus water will mix and make it a cream. Add the guanciale once served in the plate, add some fresh black pepper.

Only flaws are the are the excess of salt (but she uses Parmesan in parts) and the black pepper. Carbonara is not cacio Pepe with guanciale and eggs. It does not use pepper. But otherwise great recipe, almost perfect. I live in Parma.

Yes guanciale is the authentic way to do it, but bacon works just fine in this dish. It won't taste exactly the same obviously, but it will still be delicious. Get a good quality thick-cut, non-smoked bacon and make the same exact recipe and I promise you it'll taste amazing. I live in NYC so there's plenty of great salumerias and italian pork stores near me, but for the vast majority of the country guanciale is very difficult to get or very expensive to order. Just because it's not authentic doesn't mean it can't be amazing! Work with what you got!

Don’t use your hands to separate yolks from eggs of you aren’t going to superheat whatever the eggs are going into. Eggs are covered on salmonella and touching the shells transfers this to your hands and on to the eggs and you’ll spend the rest of the week ok the toilet cursing this weirdo that would be thrown out of a professional kitchen in less than a minute.

She has the impression that the carbonara sauce will fill up the whole in the spaghetti. I am not so sure if that is the cause. But I think the water will go through. So ultimately you have a spaghetti that will have a lesser window to get al dente.

Oh no, you don’t add the egg with the bacon. You take the same pan that you used to cook the bacon, then you put the cooked pasta after that you start whisking and you add gently the sauce.
