Lone Star Grillz Offset Vertical Smoker Breakdown

Rusty KC

Gregg, that is a bad mammer jammer! You asked for suggestions for what to cook so here goes. I'd like to see something simple like a pork but. Show us in detail how to control the smoker. Show us how evenly or unevenly it cooks from left to right, front to back and top to bottom. Also if you use the water reservoir, how easy is it to use and clean out. Also, something I've been wanting to see and there are no videos that I can find and that's how to clean it up after. And do you reseason the inside and outside. Do you hose it out or leave the grease build up for seasing. That's one of those subjects that can cause a big controversy but if your a hose it out type of guy show us that please good sir. So then after that smoke cook then obviously let's see some griddle action on that bad boy! That's my request, sir. Oh hey, around the 4 minute mark I noticed when you slid the air dampener back and forth, from this side of the camera it appeared the bolts and washers were spinning/moving like they are not tightly fastened. Are they supposed to be loose like that? Brother I'm sorry for the long long comment. I want one of those pits so so bad! I'm saving up and hopefully in a year or so I'll have mine, so until then please keep the LSG videos comming! Cheers to ya my friend and have a great day.

I'll have a better idea how this compares to my horizontal offset after my first cook on it tomorrow. I can tell you that during the seasoning process it was very efficient with it's wood consumption. The main reason I opted for the 1/2" instead of the insulated is the fact that it just doesn't get cold here in San Diego. I mean, 50ºF is considered cold here and that would be in the winter time. The 1/2" will retain heat better than 1/4", so that's what I went with. I ran this thing for about 8 hours when I seasoned it and it was very efficient in regards to wood consumption.

Rusty KC great request, if I can piggyback a request as well please, I am interested in knowing more about your offset experience in comparison with this one. I have not owned an offset smoker and I am considering one as well. Once you get the fire set to temperature and you atart your smoke, how often will you have to add additional split wood? For example a 10hr smoke how often and how much split red oak will be required to maintain your avg 225° smoke? Thanks for the detailed video, it answered several questions for me. What was the determining factor that helped you choose the 1/2" firebox over the insulated firebox? Congratulations on your newest investment!🍻

Thanks Rusty. Great suggestions! Those nuts are locked into position so that the bolts kind of roll like bearings. Thanks again!

I like the Gator Pit and it has served me well for quite a few years. I can get more meat on this vertical offset for one and there is a lot more room to work with the meat. If I'm running the GP with both shelves full, the meat on the top shelf would rub on the lid when is was closed. I don't have to deal with that. This pit is much more efficient when it comes to the fire box and air flow. I have found (now that I've done several cooks) that I'm not burning as much wood as I did with the GP. Not to mention that the fire box on this thing is giant.

Not much in life more fun than a brand new pit! I'd like to know or see what did with the tuning plates and how you got what you wanted on it. Were you just trying to equalize the temp left to right across it? Or something more complicated?

Ballistic BBQ Thanks! This was going to be a reloading/ballistics channel, we shot and edited about 9 months of video and someone stole the laptop, cameras, and hard drives, right about that time YouTube started cutting back on revenue so figured it wouldn’t be worth the time to rebuild.

Pred 3 mesiacmi

The main reason I wanted this vertical is the smaller footprint without a loss of capacity. This will hold more meat than my horizontal in 3/4 of the patio space. I am also noticing that the temps from self to shelf are very consistent. Dig your user name by the way.

Greg, it’s great to see you back on an offset stick burner again! I’m interested in seeing how you use that unique LSG firebox with the griddle and the grill. I’m from the Houston area where LSG is manufactured. There are two other pit makers here in Houston, Gator Pits and David Klose Pits. These three are the best pit makers in the universe. I own a Gator Pit and I love it. I know you are always honest. May I ask what you would say comparing LSG to Gator Pit? Thanks and I am looking forward to your cooks on the LSG. Maybe do a shoulder clod on it?

Pred 4 mesiacmi
Ballistic BBQ
Ballistic BBQ

Yes, I own a Party Gator and I really dig that pit. Tomorrow will be my first cook on the LSG, doing a couple racks of beef back ribs and a brisket, so I'll have an opinion on how it cooks by the end of the day. I can tell you this right now however. The details and workmanship in the LSG is Crazy Good, edging out GP a bit. Of course the rubber doesn't meet the road until it's cooking. I'll have a more definite answer very soon. Clod is on my "todo list" by the way.

Greg, what an AWESOME cooker! I've been wanting a Lone Star offset since I saw Russ Jones using his. I want you to do FIVE videos for me. The good news is that you can film them all on one day. The way I see it, you should do a breakfast or lunch on that handy griddle atop the firebox (#1) while you cook all three main BBQ food groups SIMULTANEOUSLY (beef, pork, poultry) in the main chamber (#'s 2,3,4). The last video could be an overview and highlight how to time-out all of the cooks so they work together. I only have one really specific request, and that is for the beef to be brisket, and that I would like you to try my rub recipe. It has been used once on video, by Meathead; in his Ultimate Brisket video. Here is a link https://www.youtube.com/watch?v=7d6Dx8PSGQk&t=389s If you like, I could also email you a copy of the recipe. Thanks and I look forward to seeing you use your new offset.

It's a nice box for sure. LSG need to step up and make those racks adjustable and eventually insulate that cook chamber. If you insulate the smoker you don't need to build it out of 1/2" material, you can build it with .062 or.125. The difference shows up in the amount of fuel required to run the beast. I just finished building a commercial smoker and I can run it 8 hours on a small handful of coals and a few chunks of cherry.

Great question. First off, I wanted a smaller footprint than my horizontal has, yet I can cook more meat in one shot. So far I've only seasoned it, but I took advantage of this burn to tune the plates and I was shocked at how consistent the temps ended up on all of the grates. The variations were only 4-5 degrees and the hotspot was under the stack, but it was only 15 degrees hotter, which is totally acceptable to me. I'm shooting a beef rib and brisket cook tomorrow, so we'll see how it goes. Based on my burn-in experience I'm extremely optimistic.
