I buy them at a store down here called, "Smart n Final". They started out as a restaurant supply store and have kinda' toned down to a combo regular grocery store with restaurant supplies as well. Did that make sense?

My answer is (this is what I tell everyone that asks this question) if your choice is between a Traeger or Rec Tec, buy a Rec Tec. Its temp control is better and the hopper is twice the size. Having had my Yoder a while now I have concluded that if it is within your budget the Yoder stands alone. Unbelievable cooker!

3:05 Have you ever spritzed with water and worcestershire? I use that on beef, namely brisket and it's amazing as a spritz. I find worcestershire is a nice "binder" for brisket before the rub too.

I would be curious why the similar sized shoulder clod you cooked on the RecTec took 23 hours and this one only cooked 10?

Thank you for the reply. Sorry, I missed the fact that the Rec Tec one was not wrapped. After doing a shoulder clod both ways did you prefer one over the other concerning taste and tenderness? I actually purchased my RT-700, a few week ago, after watching your review when you did the shoulder on your RecTec. I couldn't be happier with it so far.

Thought I covered this. Rec Tec and my Gator Pit videos were both running at 225ºF, unwrapped during the whole cook. That is just the way I have always done it. That is the way I learned. On this cook, I ran the pit at 250ºF and wrapped on color, which took six hours. It finished at 10 hours.

Greg, that looks amazing! I smoke beef chuck way more often than brisket due to both cost and time cost... I think I will do this though since, that looks so awesome. Did you happen to temp it once it was done? Just curious about final temperature vs a brisket...

That looks really good Greg, nice smoke ring. Did the meat have a good smoke flavor? Believe it or not here in Central Texas it's hard to find shoulder clod and if you do it's more expensive than brisket.

I have made a shoulder clod and definitely needed to be better prepared but loved the experience. Now NJ I need to save up 1400$ for the Yoder Ys640. I think its near 2k for the Comp rig but love those things

Beutiful job. 10 x 👍🏻 2 things that come to mind, the hump on the Brahma bulls is a slow cook like that clod, have you done a video with that cut and if not, can you. I have had it and its really good but the way you did that clod I get the feeling it would work wonderfully. Also, do you think it would work well with an English roast beef? If so, can you do a video?

I was hoping , you would take on the task, and make your version of this beast. It's served at a place in Baker Ca. called, Mad Greek Cafe. The burger is called the Mad Greek Double Onassis Burger! That is a great looking piece of meat. I saw a beef clod the other day in the store, but way smaller, only about 4 lbs - a tiny cow or maybe just a part of one - but had no idea what to make with it if i bought it. Now i know what i can try :)

I used to be a pit master before there were pit masters. I roasted suckling pig, mostly. Sometimes the King`s deer. LOL For a baste, it was just Hacker Pschorr Weiss Beer and maple wood, a lot of it, or apple wood.  If Hacker wasn`t around, then just Budweiser. You don`t gonna belief how delicious that pig was. just a random suggestion that i thought of because i saw Russ from smoky ribs had commented on your video, and i had asked him about doing this same thing im about to mention to you. what would you think about doing a video on smoked marlin? you can make dips, tacos, burritos, etc. your in the san diego area im sure marlin can be acquired.

I was dead set on getting a Yoder Wichita, like Troy has, but started looking at the YS640 which has a tremendous following, or so it seems, and now I'm waffling between the two...first-world problems I guess...

I own a 640 & it's a great cooker, set it and forget it for the most part. Personally I like a stick burner overall It just gets the smoke flavor I like over any pellet pooper! I use a smoke tube with my 640 to help with that. BTW the folks at ATBBQ are great to work with no matter which way you go.

No. The whole "fat cap down" thing can start a lot of arguments in the BBQ community, but it has been proven time and time again that its best benefit of the fat cap is to protect the meat from heat. If the majority of the heat comes from above, cap up. From below, fat down. This will keep the meat moist along with the marbling fat inside of the cut.
