I think an improvement for those of us without a slicer would be to use a longer lower form such as 2 x 4 x 8 is the same volume as 4 x 4 x 4. Your slicer was bogging down even with soft American cheese. It would really struggle with real cheddar. I am glad to have found this video as I like cheese of all kinds and could see me making this. Even an 8 x 4 x 4 pan would work, it just would not fill it to the top. I shall have to try making this with Mexicana cheese (an equivalent of Pepper Jack sold in the UK). They do sell it in slices, but it doesn't melt properly and lacks the all important gooeyness.

People are so stupid. He is *processing* the cheese. Not making it from scratch. He is turning the cheese into an emulsion. Which is a food that has its fat and water mixed together. This changes the cheeses texture and properties completely. It melts better and mixes into both water and fat. Regular cheese wont do that on its own. Try mixing regular cheese with water and you just get a disgusting mess.

I get the point you are trying to convey here. The truth is... ( I know you're not going to agree with this and that is fine) American cheese is pretty much the standard on many of the #1 burgers in the US. ((Good)) American cheese is creamy, very mild and does not separate like other cheeses do when it melts.

My use of kosher salt (and most chefs use of kosher salt) has nothing to do with my religion. I'm not jewish. It has everything to do with its pure flavor and perfect texture. "Table salt" is cleaned with chemicals and has iodine and anti-caking agents added. I can taste that kind of metallic flavor and I don't like how fine the crystals are. If I'm not using kosher, I use sea salt.

I studied food science for more than 3 years and I can tell you that fats, any type, (the ones on palm oil, cheese meat etc) except palm seed oil are very important to your diet, I have seen diets that removes fats in order to decrease calories and choleterol, which is extremely disappointing, you have to decrease ldl production in the liver, the cholesterol is very important to our cells only too much ldl transported cholesterol can harm you, I can personally suggest to avoid fruit to reduce fructose, and add more simple sugar to the carbs rate. And if someone finds this comment wrong, please reconsider your perception of wrong and right otherwise if you can prove that this is wrong i would like to learn more from reliable sources.

Thank You Greg I moved from the US to Australia. I like the cheese that we have here, but after awhile I stopped putting cheese on my burgers. I just thought I lost my taste for them. About 4 years ago they opened a Costco. I bought some American cheese just for "old times sake" and then decided to try it on a burger. My love for cheeseburgers returned. I think Greg is spot on. It is the melt and the complimentary taste along with the creaminess. I do my grilled cheese with American and Cheddar. And there is not way you can make a chili size with anything than American Cheese. Same for a Philly Cheesesteak. Talk about processed; many of the best cheesesteaks sandwiches actually have melted Velveeta.

I use very good local cheese from Dutch local farmers....sorry...that is still WAY better then this american cheese you use most of the time. Too bad you don't try using cheeses from local farmers near you. I'm sure they would love to have you promote their cheeses which have much more taste then the average american cheddar gummy cheese. Just a tip....

Isn't everything "processed?" I'm lost. What is real American cheese? It's white and sliced thin to bring out the real flavor. When I see yellow American cheese I want to runaway. I once bought a burger from Burger King, took it home, added a pickle and made a home made burger.

No...  I bought two blocks Colby.  I had to cut one of them in order to come up with 24 ounces, as they were two 16 ounce blocks.  I placed the 16 ounce block and the now 8 ounce block in my food processor and shredded the cheese.  In the spirit of saving time, I didn't feel the need to show everyone this part.  Then, as I think you saw, I processed the cheese into "American Cheese."  Yeah...  I need a new meat slicer.
