Anyone looking to make the perfect burger use this method. Even if from a shop, marinade a bit if needed with whatever but salt is a must. It creates the stickiness on the strands of meat allowing to bind. If you sea people smashing the hell out of it besides by design be wary. This video should have the gold label for burger creation. Gently forming it is by far the greatest tip i ever got making burgers.

This is great. I had literally 0 idea how to make burgers before this. It's hard to find videos that cover the fundamentals and more theory-related aspects, especially with food. I'm not looking for recipes, I'm just looking for techniques and why people use them. Great stuff my man. I have a question, though. Does the cooking change drastically if you're using a stove-top and a skillet or frying pan? I assume it doesn't.

One of the "tricks" I use is: I buy a package of "Bacon ends" at my big box store. Bacon ends are mostly smoked fat. I then mix to 80/20 with lean meat and have the smoked bacon flavor with my beef patty.

Is 10 ounces correct? Just wondering, being from Germany. That would translate into almost 300 grams per patty. I've been making much smaller burgers (and I presume smaller buns, it's difficult to compare your video to my burgers by eye measurement alone) with about 5 ounces per patty. Just making sure! Other than that I love your channel. Very comprehensive and down to earth. You're making it all about the food and not about yourself which a lot of other people can't seem to do.

Biggest mistake when making a burger is not sauteing onion in the burger juices, really slowly, until it becomes nice, soft and sweet. That makes a burger a million times better.

For detail ballistic bbq is on point. A good tip to form the minced beef is put the ground mince on cling film and wrap then gently form on a tabletop with small circular motions on top whilst keeping thickness uniform by cupping around the edge with other hand as you go. You get the perfect shape with a perfect pressure distribution. This depends on correct amount of salt finger massaged into the mince to form a good level of cohesion whilst maintaining the integrity of the mince strands. I should add these are pretty close to perfect imo though, far better than most so called 'best burger' vids online, subscribed.

for those of you who want to live healthy and make it to 80, consider avoiding meat and dairy. See Earthlings, see Cowspiracy and you'll understand why it is necessary that you do. Please notice EVERYONE who is answering unhealthy stuff - such as meat and dairy - is ugly and fat. The only person who looked acceptable is the girl that said 'avocado' Even Rachel Ray has never looked healthy. Here's the bottom line - the PERFECT burger is a good veggie burger. Beyond Meat makes an incredible burger that uses the 'hemo' from grass which is what all these unhealthy people in the video are craving. It's not the animal flesh, it is that they are addicted to blood. The taste of blood, which in fact comes from grass. Beyond Meat skips the cow and puts that taste right into a veggie burger that is virtually cholesterol free and very low in calories. The taste is incredible. If you add healthy toppings like avocado, spinach leaves, even caramelized onions (white ones are the best) and then even use Sweet Earth bacon which is made of apples and tofu, then you've got a tasty burger and it is perfect, because it keeps you out of the hospital, it feeds you and don't look like that poor heifer that was brutally murdered so you could be a total ass
