Anyone looking to make the perfect burger use this method. Even if from a shop, marinade a bit if needed with whatever but salt is a must. It creates the stickiness on the strands of meat allowing to bind. If you sea people smashing the hell out of it besides by design be wary. This video should have the gold label for burger creation. Gently forming it is by far the greatest tip i ever got making burgers.

This is great. I had literally 0 idea how to make burgers before this. It's hard to find videos that cover the fundamentals and more theory-related aspects, especially with food. I'm not looking for recipes, I'm just looking for techniques and why people use them. Great stuff my man. I have a question, though. Does the cooking change drastically if you're using a stove-top and a skillet or frying pan? I assume it doesn't.

One of the "tricks" I use is: I buy a package of "Bacon ends" at my big box store. Bacon ends are mostly smoked fat. I then mix to 80/20 with lean meat and have the smoked bacon flavor with my beef patty.

Is 10 ounces correct? Just wondering, being from Germany. That would translate into almost 300 grams per patty. I've been making much smaller burgers (and I presume smaller buns, it's difficult to compare your video to my burgers by eye measurement alone) with about 5 ounces per patty. Just making sure! Other than that I love your channel. Very comprehensive and down to earth. You're making it all about the food and not about yourself which a lot of other people can't seem to do.

Biggest mistake when making a burger is not sauteing onion in the burger juices, really slowly, until it becomes nice, soft and sweet. That makes a burger a million times better.

For detail ballistic bbq is on point. A good tip to form the minced beef is put the ground mince on cling film and wrap then gently form on a tabletop with small circular motions on top whilst keeping thickness uniform by cupping around the edge with other hand as you go. You get the perfect shape with a perfect pressure distribution. This depends on correct amount of salt finger massaged into the mince to form a good level of cohesion whilst maintaining the integrity of the mince strands. I should add these are pretty close to perfect imo though, far better than most so called 'best burger' vids online, subscribed.

Even in Europe a lot is just beef and fat(in actual burger places). I usually buy pork and beef for my burgers, but when cooking them medium i do however prefer beef only, just because raw-ish pork is not my cup of tea.

I always overwork my patties when I make them but the reason I do that is because they always stick and will fall apart when I go to flip them if they aren't packed together good. I do know what people mean by the hockey puck look though. what's the best way to keep burgers from sticking?

make them a few hours before cooking to allow the meat to adhere to itself. adding matza meal or bread crumbs also helps them hold together. once on the grill, DONT MESS WITH THEM!. don't touch until they have atleast cooked half way, the bottom gets solid enough and the fat starts to melt to allow the burgers to slide if necessary to escape'flame-ups. Trying to move them around before they have toughened up on the bottom just rips them apart. wire brush the grill during warm-up to get rid of last weekends crap, but put the new burgers on before the grill gets all dry and super hot. you want to put them on a greasy grill, to prevent sticking.

Do it. they also usually have sausage making attachments, so life is good. Sometimes hamburger is more expensive than some cheap, tough roasts, but we don't care about toughness because the machine is going to grind , (or pre-chew) that for us. add seasoning to the hopper as you go to save mixing time. add bacon! mine is a cuisinart, works just fine and not a real hassle to clean.

Greg have you ever heard for Serbian pljeskavica? It is similar to burger(usually bigger and wider to be easier to eat and in type of bun called lepinja),while it is more about meat,not about sauce and similar stuff that much,everyone keep recepy for meat as secret,some are made from from various types of meat,some just have secret spice etc.I only know that prepared meat need to stay over night in fridge. Belive me if you ever tried it,you will say that burger sucks. Cheers
