Mustard, pickles and raw onions is what makes the difference between a Tennessee burger and a burger from the Northeast, which relies mostly on ketchup for its flavor, in my opinion. I first had a cheeseburger with mustard, raw onions, pickles, mayo and no ketchup as a child years ago after going to Chattanooga to attend a funeral, and now 48 years later, I still prefer the these flavors to the standard NYC burger. The only difference is that I now love the flavor of a slice of ripe red tomato right next to the mustard and raw onion.

I’m from Tennessee I’ve had a Dyers every summer as a kid visiting my Aunt . Fayetteville Tennessee is close to my hometown and a burger joint called Kens has the states best burger it’s called the slaw burger. You would very much enjoy doing a copycat of it !

Beef tallow is the best for deep frying! You should do an episode where you make proper belgian fries (fries are actually not french). Cut bintje (or similar) potatoes rather thick, optimally 0,5x0,5", fry in medium heat beef tallow until cooked. Strain and let completely chill, preferably in fridge, before second fry in high heat beef tallow. You will not be dissapointed, there are no better fries.

You didn’t mention cook time or how much magi? I have a pot of talo I keep in the freezer. You folks should try making it. It’s easy and your butcher will probably grind and give you the fat if you give him a days notice. Pour it into cupcake foils and freeze for browning red meat

My mouth usually waters after watching your videos but this one just made me sick. Deep frying the patty and cheese is just disgusting to me. Btw, in the poor areas you can get meat with that much fat as they take advantage of people like us. Here in WV, it is very common to find it.

And I was advised by locals here that we do have 73/27 sold in chubs. Went to my local store and found it. Believe me, I expected a push back from many on this video and I am totally fine with that. It's not my recipe or technique, but it is a "historic" burger and it was surprisingly good. I can't even find 80/20 in Sweden. We only have 88/12. I also don't have a meat grinder, and even if I did, you can't really buy tallow on it's own here either.

See if you can buy fat trimmings from your butcher. They may just give it to you. All you have to do is melt it, then filter it through cheesecloth. Thanks for watching!
