This video is so brazilian, you even made farofa. Although the way we cook picanha in Brazil is totally different, and I recommend you to search about it if you didnt know, it was almost the same to bbq in Brazil!!!

Awesome video! Just a quick PBC question. Do you use a full basket of charcoal for these short cooks? I can't get a straight answer from them. I have been filling the basket and taking 40 pieces out to put in the chimney starter and it seems like such a waste.

In Brazil it's called Picanha.  In the US it is referred to as the rump cover, rump cap or coulotte. North American butchers generally divide it into other cuts like the rump, the round and the loin. In some places in the US it is called top sirloin cap.

As "BBQ EM CASA" and "SOUS VIDE" both said: really well done! The picanha is eaten like that in the middle of the country, in the south, where I am from, we just eat pure meat with no rice/beans (it's illegal in the south haha) however, sometimes with potato salad. I cut my teeth on a NBBD offset, and I own a Gator Pit (which I love).  This just plain old works every time.  You don't need to babysit it and the nice thing is it is very affordable, so folks on a budget can produce good food.  The same price would get  you one of those POS "offsets" you see in front of the big box stores, that just don't work.  I can't tell you how many messages I get on those flimsy pieces of crap.

Hey Barlow! To do it on your Weber the best way is to place the entire Picanha with the fat side on the grill. When you notice that the fat is almost cooked, you take the meat off, slice it generously, season it only with salt, then put on the grill again until reach rare to medium rare. That's how most of us eat it here. Some notes: Notice that I didn't told you to put salt before you slice it, only after. When the fat is rendered into the meat before you slice it, the meat you still be raw, because its usually a large piece. Sorry for the long text, but I really think you will enjoy the Picanha done that way, the best you for your Weber! Best!
