So the difference between the 8 hours and 30 mins is that in the former you made a stock, in the later, you used a "fresh stock" (ie made yourself for 8 hours...)? Also, you cook it and keep it go cold while you talk???

I hate it when recipes tell me it would take "30" Minutes to do something... BUT you need all these ingredients that are not commonly available ... oh and chicken stock... but not the ready to go one... the real one that takes hours to do properly. I mean... if that's how time measurements in recipes work, than i can cook a 4 Star Michelin Chefs meal in 5 minutes, because i just put all the already made things together and voila. All you need is a ready roasted turkey on a bed of root vegetables with an already made jús... just grind up some rock salt to taste and there you go - 5 Minutes... I don't care if it takes longer, but don't bullshit me with an awesome "30" minute Meal that most of the working society couldn't do if they have not a dedicated cooking day in the week for all the preps.

I have been a roman fan all my life. And when I first moved out on my own I was a dorm rat in the USAF so cheap food was a staple. I introduced roman to my wife as a way to get rid of leftovers. Nothing better than cleaning out the frig into a pot of roman. And then I died and went to heaven. I got a 4 year assignment to Japan. I tried my hardest to go to a different roman shop as often as I could. I must of tried out over a thousand roman shops and loved 90% of them. My wife and I still have a frig cleaning at least once a week and I don't see it ending anytime soon.

Super Cheffy Trick use a pressure cooker you can achieve the 8 hour boil in ~1.5 hours. Take it to harsh boil, skim then pop the lid on and let it go at high pressure for about an hour. Haven't done this specifically for ramen but we regularly do stew this way. Bones, or bits, broth strain then right back in the pressure cooker, 10 minutes if you add root veg and 3 minutes if no root vegetables.

Why take the fat off the pork? Fat is an INTEGRAL concept in traditional ramen, you would have made a much closer product if you left the fat on that piece of meat. Fat is a fragrance sponge, it draws so many flavors out, and sends them straight to your nose. When you fish out noodles, they pick up a little bit of the surface oil, so you get a nice, silky coat with each slurp, and those fragrances it was soaking up turn to flavors on the noodles. You should all check out Alex French Guy Cooking's channel - he has a huge series of ramen videos, analyzing the shit out of it. You could learn a lot about why a hole in the wall ramen place tastes so much better than a fancy restaurant that happens to serve fusion ramen in most cases.

I personally tried out the 30 minute recipe on top of it taking over an hour for everything, the finished recipe was bad you can’t taste half of the ingredients and the seaweed over powers everything. Overall I would not recommend anyone to make this recipe.

You should try it again after roasting the meaty bits for the stock in the oven at 350F for 45-60 minutes. Why do you change the water in the stock? I skim the top while cooking, strain it like you do, refrigerate it and skim the top again if it's very fatty. Love the channel and just found it a couple weeks ago!

Geez, you don't boil the noodles in the 8h+ boiled broth. You heat up the broth (preferably after letting it cooldown properly so it solidifies to sort of gelatinous mass, and take the white fat shite off the top), add separately cooked noodles to the dish, and add meat/garnish. Ultimate lazy food; takes 8~12 hours to cook depending on what bones you go for - literally only thing you have to do is check every hour or two and top water if necessary.. Also, according to most of the recipes, you're supposed to fry/burn the vegetables before adding them to boil. More taste than using raw.

Guys I absolutely love your shows but I need me some more pass it on cooking challenges. They are so entertaining and informative watching two chefs try to create a meal aided by three "normals" none of whom can talk to each other or have sensory input into what's going on in the kitchen. It's a fantastic way for non chefs to learn tips and tricks for saving certain dishes from almost certain disaster, secrets for pulling together a quick sauce or desert in ten minutes, coping with a kitchen crisis and still pulling out an edible meal at the end of it which is suitable to serve to your boss as one example.
