Definitely the long cook one. I used to work at a central kitchen[large Japanese chain] that made the pork 'lard broth' in a section next door to mine. Yes it did look and smell they were cooking enriched uranium for over 12 hours at once, them wearing gas masks and heavy rubber PPE didn't help to make it look less military grade. However I must admit, the end result has such a heavy rich and complex flavour, you can't ever go wrong with that.

This ones its a little bit misleading, you guys are comparing different kinds of broth, but I would not call it "Ramen recipes" its just "broth recipes". Ramen its a complex and gorgeous combination of components. The broth, the noodles, the tare, the oils and aromatics, toppings ... it's a whole universe, the egg by itself its worth a good 5 mins video (from the boiling to the marinade). I love your channel guys and I would be really exited to see you comparing real ramen recipes by creating a whole ramen dish in 5 mins, 1 hour and 8 hours or more (from the noodles all the way to the toppings). Love your work! =D

The traditional Ramen is missing texture in the broth. I'm lucky to had learn the real Tonkotsu Ramen (the most traditional of all, same as yours, but no chicken carcass or shiitake in the broth) from a ramen chef. You boiled the bits only 8 hours. They must boil 12 hours to release all the collagen (not gelatine) and give the broth a milky thick texture. Also I think you used the wrong type of Tare (the seasoning of the Ramen), for that recipe I would had personally used Shoju Tare, made with soy sauce and infused in flavor with ginger and chives for a rich salty taste to add salt to the dish.

I tried the 30 min one and didnt realize that anise is licorice flavor. I recommend putting that in very last and not cooking it for long. It had a weird taste or just leaving it out completely. Besides that i added boiled bacon as my garnish with just a bit of the bacon fat still on it. Freaking delicious!

So, I noticed that the "ramen" doesn't have a tare which is an essential element of ramen. Miso and soy aren't a tare. It still looks like a great soup, I'm just not sure this is ramen.

I know no one on a cooking show wants to hear this - but you can buy really high quality fonds these days which will taste the same - or close to it - as an 8 hour boil. It's WAY cheaper, faster and results are as near as it doesn't matter - the same.

So the difference between the 8 hours and 30 mins is that in the former you made a stock, in the later, you used a "fresh stock" (ie made yourself for 8 hours...)? Also, you cook it and keep it go cold while you talk???

I hate it when recipes tell me it would take "30" Minutes to do something... BUT you need all these ingredients that are not commonly available ... oh and chicken stock... but not the ready to go one... the real one that takes hours to do properly. I mean... if that's how time measurements in recipes work, than i can cook a 4 Star Michelin Chefs meal in 5 minutes, because i just put all the already made things together and voila. All you need is a ready roasted turkey on a bed of root vegetables with an already made jús... just grind up some rock salt to taste and there you go - 5 Minutes... I don't care if it takes longer, but don't bullshit me with an awesome "30" minute Meal that most of the working society couldn't do if they have not a dedicated cooking day in the week for all the preps.
